Why I Went Raw

It was pretty much an overnight decision. I was doing research on digestion enzymes because I thought I needed some to help speed up my sluggish digestion and low energy levels. I stumbled upon raw, living foods and all their digestive benefits and great healing properties, and I was intrigued. It seemed to suit me to a tee. And all the background information I read made sense once I put everything in perspective. Humans were designed to eat a raw, vegan diet. It even says so in the bible! (Genesis 1:29)

Reversing Leaky Gut, Thyroid Disease and Chronic Fatigue

I am proud to say that I have reversed all of my illnesses with a raw, living foods diet. I no longer suffer from fatigue, depression, irritable bowel, abdominal pain, headaches, nausea, or sinus infections. I only sleep 7-8 hours a night, instead of my previous 10-12 hours a night. I wake-up with tons of energy and can't wait to start the day, and I don't need a huge cup of coffee to get me going in the morning either. My sleep is much more restorative, I no longer toss and turn throughout the night, and I have much more vivid and colorful dreams (not that this was a concern for me, but it's a nice bonus!) I am completely off my thyroid medication and do not suffer any more symptoms of having low thyroid levels. All in all, I just feel great! I attribute it to completely changing my diet to raw foods, getting plenty of fresh air, exercise, maintaining a healthy attitude and staying educated. It is possible to heal yourself from chronic diseases. Don't listen to the doctors. Medications only suppress the symptoms, they do not target the reason for being sick. You need to get to the root of the matter if you want to be healed.

Your Body is the Greatest Healer

Your body is designed to heal itself. If you cut your hand, it will heal automatically, unless you deliberately put dirt in it, or you keep picking it open, or if your immune system is severely suppressed by the way you have been eating and living resulting in some very serious illness that causes delayed healing. If you smash your thumb with a hammer, it will eventually heal, unless you keep smashing the same thumb with a hammer EVERY DAY!

Simply put, your body will heal itself unless you keep injuring it. But most people don’t realize that they are “injuring” their body every day by the way they are living and eating. When we eat wrong and live wrong, these small daily “injuries” will result in a disease of one type or another. Unfortunately, doctors only learn how to treat the symptoms of disease rather than addressing the root cause of the disease itself. Why? Because they are never taught the causes of diseases. Doctors give drugs, all of which have side effects, and all of which harm the body! And drugs only cover up the symptoms. The only way to really get well and remain well, is to stop doing the things that cause disease and start doing the things that rebuild the immune system, the only system in your body that can get you well and keep you well!

Fasting intensifies healing as deep tissue and tired organs are repaired rapidly. To heal illness the body must pull all of its resources toward cleansing and repairing by removing appetite and reducing or stopping digestion. Wounded animals will fast, emerging to eat only after their injury or broken bones have healed. There are testimonies of people’s old wounds aching during a fast for the first time in years; unnecessary scar tissue is being broken down as fuel. This is the reason why there is little desire to eat food when sick, the body wants to focus all of its resources on healing.

If you eat mainly cooked or processed food during sickness the body’s immune system is denied opportunity to operate at its full genius. Most often instead of nutritious, health-giving food, the delicate tube and membrane structure is saturated with cooked food, cigarettes, coffee, alcohol, and drugs. Why does fasting have such a powerful effect on healing the body? In the fasting state, the body scours for dead cells, damaged tissues, fatty deposits, tumors and abscesses, all of which are burned for fuel or expelled as waste. Diseased cells are dissolved in a systematic manner, leaving healthy tissue. The result is a thorough cleansing of the tubes, membranes and cellular structures. Ingestion of mucus-forming foods clogs the body's microscopic tubes and membranes, all of which are the highways used by the immune system. Fasting dissolves this internal mucus. During a fast it is common for the nose, throat and ears to pass sticky mucus, clogging the sinuses. Strands of mucus may be found in the stool after the first bowel movement. There is a remarkable redistribution of nutrients in the fasting body. It hangs on to precious minerals and vitamins while catabolizing on old tissue, toxins and inferior materials.

Dangers of a High Protein Meat and Dairy Based Diet

All meats upon digestion are broken down into purines and then uric acid, which requires an enzyme called uricase to further digest it and be absorbed by the body. However, humans do not have the uricase enzyme. Our bodies ways of compensating for the undigested uric acid is to use our stored supply of minerals, mostly calcium, to neutralize the uric acid. This results in osteoporosis of the bones and a loss of dentin on the teeth. But wait, we're not done yet! When uric acid is passed through the bloodstream, it forms a crystal-like shape and sticks to the walls of the arteries and veins. Once the uric acid crystals provide a roughened surface, a combonation of calcium salts and cholesterol will stick to it, leading to artherosclerosis (hardening of the arteries), varicose veins, and arthritis of the joints. Animals, on the other hand, do make uricase and are able to properly digest meat without any adverse effects.

Humans are not designed to drink milk or eat products that contain milk derived from animals. Casein is the substance that binds milk proteins, and animal milk contains plenty of it. Casein is best broken down by the enzyme rennin (also known as chymosin) and humans do not have it present in our digestive systems. We do have some rennin available up until around age 3, when infants should be weaned from milk products and ingesting solid food instead. So how do human adults digest milk if we don't have rennin? We do have the enzyme pepsin, which acts like rennin, but does not do a very sufficient job. Pepsin breaks some of the protein bonds that casein contains, but not all of them. Ever wonder why so many people have problems digesting milk products? It's no conincidence.

Your Body Attacks Cooked Food!

In 1930, research was conducted at the Institute of Clinical Chemistry in Lausanne, Switzerland, under the direction of Dr. Paul Kouchakoff. ("The Influence of Food Cooking on the Blood Formula of Man") It was discovered that after consuming any amount of cooked food, white blood cells were immediately elevated in the bloodstream. White blood cells, also known as leukocytes, are part of the immune system and increase in number when a foreign substance is present, it is our defense mechanism against invaders that pose a harm to our bodies. This was thought to be a normal reaction to the stress of ingesting food and was coined the term "digestive leukocytosis." However, after further research it was discovered that eating a meal of raw, uncooked food produced no rise in leukocytes. They tested many different types of foods and always found if a food was cooked it triggered an increase in leukocytes, the same food uncooked did not trigger an increase in leukocytes. The body viewed these uncooked foods as "friendly foods."

So what if my blood leukocytes rise after a meal you say? Well if you are eating 3-4 times a day, and many people eat more than that, the constant increase in white blood cells causes chronic stress on your body, leaving your immune system suppressed and open to any real foreign invaders that come along. Raw foodists have fewer incidences of cold and flu viruses, and increased energy because their body isn't trying to fight off the foreign invaders of cooked foods all the time. Energy can be focused elsewhere, such as cell repair, cell growth and reguvenation.

In 1912, French chemist Louis Camille Maillard discovered what is now called the Maillard Reaction. Maillard was trying to discover the chemical substances that made the actual tastes in cooked food. In one experiment he measured the types of molecules in raw potatoes. Then he boiled the potatoes and discovered that by just boiling, 420 new types of molecules were created. These molecules never existed in natural and unadulterated foods. In fact, when you cook, you are creating hundreds of thousands, if not millions of new molecules that the human body considers toxic.

Cooking is chemistry. Have you ever noticed how much an egg changes color and texture by being cooked? This is obvious visual evidence of the molecular damage done in the cooking process. Cooking denatures proteins and caramelizes carbohydrates. Caramelization produces six different levels of chemical reactions in the sugar molecule. It has been well known for years that heated oils and fats are carcinogenic. Why do you think the body seems to attack itself with autoimmune diseases? It is because we've built our bodies up with foods that are not natural to the human body and our body identifies these substances as toxic invaders. Most people switching to a raw food diet, quickly find their arthritis and many other illnesses no longer bother them.

The Vitamin B-12 Myth

The ever popular "Where do you get your B-12?" question never seems to go away. Like everybody else, I thought B-12 was only available from animal products, until I was snacking on some dulse one day and read the back of the label. There it says one serving provides 23% of the daily requirement for B-12. Raw nori and wakame are also great sources of B-12. So there you have it folks, B-12 comes from sea vegetables!
